Just did new update for app don’t like the smaller screen don’t like how the zoom in is different
we’re can I find the previous version to go back

There is a web site called APK Mirror that keeps historical copies of Android apps. Of course, you will have to be alert because Google Play will offer to update it (over and over).
For Apple....... (I have no idea)
