Why doesn't Mac Client v8.7.x Update Update on it's own, or at least let you know there is an update available?

That feature is not in the current version but i believe Reolink are working on it so the clients will notify you or auto update.
For now you can download the latest version here: https://reolink.com/software-and-manual/
v8.8.1 is the latest Mac client version as at 1st Aug 2022 -
@big_ted Can you at least tell us what changes were made to v8.8.2 so we can determine whether there is a need to upgrade? I was told previously by customer support that changes from 8.7.1 to 8.8.1 were minor in response to special requests and there was no need to upgrade unless the current version told me to update.

Yes from what I have seen only minor fixes as below
Change list:
-Showed user type on Live View, Playback, and Download screens
-Allowed users to set up retention days of video footage recorded to the NVR
-Added an option to (not) show battery usage stats
